It is a distant cousin of the humita (a kind of tamale), since it is made with white corn flour and its flavor is simple and sweet. Once ready, the dough is wrapped in achira leaves to be steamed in a tamale pot.

Preparation
Sift the flour.
Beat the butter and butter until they are creamy and add the sugar little by little.
Add the yolks, one by one, until creating a homogeneous dough, sprinkle the flour little by little.
Add the previously kneaded cheese, the brandy, the beaten egg whites until stiff.
Stir slowly while adding the vanilla essence.
Once it is ready, the dough places a spoonful on the achira leaves with two to three raisins.
Fold the sides of the sheet over the dough and then fold the ends back so that the dough has a place to sponge.
Steam for about 20 minutes.
Serve with hot coffee.
