Preparation
Chop the mushrooms and onions.
Put the onion in the pan with a little oil until it becomes translucent. Add the mushrooms with a little salt and sauté until they release all their liquid, about 10 minutes.
Put some cooking spray in a cupcakes tray.
Place the slices of ham in the cupcake molds in the shape of a flower.
Fill the ham with a large spoonful of cooked mushrooms and open an egg on top. Do the same with the rest of the eggs. Put salt and pepper on top.
Bake at 200 degrees (400 F) for 15 minutes until egg whites are cooked and the yolks are soft.
Remove from the molds with the help of two spoons.
Serve on toasted bread cut into casters (with an upside down glass) and serve immediately.
