Chilaquiles cake with Milanese

Ingredients

4 servings
  • 1 tablespoon of oil
  • 4 Serrano cpeppers
  • 1/2 onion In rooms
  • 2 cloves of garlic
  • 8 green tomatoes in halves
  • enough of coriander
  • 3 allspices
  • 1 teaspoonful of cumin whole
  • 1 Cup of chicken soup
  • 1 tablespoon of oil
  • 4 cups of tortilla chips of corn
  • 500 grams of chicken Milanesa (breaded)
  • 3 eggs milkshakes
  • 1/2 Cup of ground bread
  • enough of oil to fry
  • 4 Mexican telera rolls
  • 1 Cup of refried beans
  • to taste of cream
  • to taste of Panela cheese grated
  • to taste of red onion in thin strips

Preparation

For the chilaquiles, heat the oil in a deep pan, add the onion, garlic, tomatoes, cilantro, allspice, cumin and cook for 15 minutes. Then add the chicken stock and cook for 10 more minutes, or until the liquid is reduced by half.
Blend all of the above and sauté in a pot for 10 minutes. Then add the tortilla chips and incorporate perfectly. Reservation.
Breaded the milanesa with the egg and breadcrumbs, then fry until golden brown. Go through absorbent paper to remove excess grease.
On a board, cut the bolillo in half, spread with beans, fill with the chilaquiles and the milanesa.
Accompany with cream, fresh cheese and purple onion. Enjoy
