Preparation
In a pan place the vegetables to roast, except for cilantro for about 10 minutes.
Blend all roasted vegetables and season with salt and pepper.
Cut the tortillas into triangles and fry them in a little hot oil.
Mix the fried tortillas with the hot red sauce.
In a pan with a little oil fry the eggs separately.
To serve place the chilaquiles with the sauce on a plate, add a little cream, cheese, onion and the egg on top. Decorate with a sprig of cilantro.
