These delicious chimichangas are super crispy on the outside and spicy on the inside. They have a touch of cheese inside that makes them even more irresistible and the best thing of all is that they are accompanied with a delicious guacamole.

Ingredients

4 portions
  • 1 tablespoon olive oil
  • 1/4 onions, finely chopped
  • 1 clove garlic
  • 1 cup cheap shrimp, boy
  • 1 tablespoon chipotle chili, ground
  • 1 teaspoon salt
  • 8 flour tortillas
  • 1/2 cups refried beans
  • 1/2 cups asadero cheese, in strips
  • 1 cup oil
  • 1/2 cups sour cream, To accompany
  • 1 cup guacamole, To accompany

Preparation

In a pan over medium heat, heat the oil and cook the onion and garlic. Add the shrimp and chipotle and cook for a few minutes. Season with salt. Reservation.
In each tortilla, sprinkle a spoonful of refried beans, add the shrimp and a little cheese.
Close in chimichanga form and secure with a toothpick if necessary.
Fry the chimichangas in hot oil until they are golden brown, about 3 minutes. Drain on absorbent paper and serve immediately with cream and guacamole.

PRESENTATION

Accompany with guacamole and sour cream.

You can make them from arrachera or cecina enchilada.
