Preparation
In a pan over medium heat, heat the oil and cook the onion and garlic. Add the shrimp and chipotle and cook for a few minutes. Season with salt. Reservation.
In each tortilla, sprinkle a spoonful of refried beans, add the shrimp and a little cheese.
Close in chimichanga form and secure with a toothpick if necessary.
Fry the chimichangas in hot oil until they are golden brown, about 3 minutes. Drain on absorbent paper and serve immediately with cream and guacamole.
