Ingredients

  • 20 pieces of Corn tortillas
  • 3 pieces of habanero pepper
  • 250 grams of Mennonite cheese
  • 250 grams of Cotija cheese
  • 50 grams of sausage Iberian
  • 50 grams of red onion finely chopped
  • 50 grams of pineapple finely chopped
  • 200 milliliters of corn oil Oleic
  • 1 piece of Romaine lettuce cut into strips
  • Dried oregano to taste
  • Salt to taste
  • 1 clove of garlic

    Preparation

    We passed the tortillas for oil and booked.
    Mix the cheeses with the chorizo, fill the tortillas but reserve a bit to decorate.
    Roll the tortillas to make the enchiladas and reserve.
    In a separate pot boil the peppers, with the onion and garlic.
    Blend the previous mixture only with a little of the cooking liquid.
    Place the enchiladas in the pan and sauté them for two or three minutes and remove.
    We fry in the same oil the filling that we reserve, and remove from the fire when the chorizo ​​changes its color to a red tone of greater intensity.
    We mount the plate and serve with the extra filling on top, followed by the lettuce, onion and pineapple.
    The habanero chile sauce can be used to bathe them before or after serving.
