  • 1 clove garlic, for the sauce
  • 1 twig fresh coriander, washed, removing all impurities and pat dried, for the sauce
  • 1 cup sour cream, for the sauce
  • 1/4 cups chicken soup, for the sauce
  • 3 tablespoons oil, a tablespoon for the sauce and two tablespoons for the enchiladas
  • 1 pinch salt
  • 1 pinch black pepper
  • 8 corn tortillas, for the enchiladas
  • 2 chicken breasts, cooked and shredded, for the enchiladas
  • 1 cup manchego cheese, grated, to garnish


Preheat the oven to 200 ° C. (392°F)
For the sauce, boil the tomatoes and peppers until the tomatoes are cooked.
Blend tomatoes and peppers with onion, garlic, cilantro, cream and chicken broth.
In a medium saucepan, heat a tablespoon of oil and fry the sauce for 5 minutes over low heat. Season and set aside.
In a pan, heat the rest of the oil and roll the tortillas one at a time, on both sides a minute to soften. Drain
Fill the tortillas with the chicken, fold and roll. Arrange them in rows in a oven proof dish and smother them them with sauce and top with cheese.
Bake au gratin in the oven 5 minutes. Serve.


It is served with refried beans.
