4 servings
  • 1 kilo of green tomato washed, disinfected and pat dried (for sauce)

  • 1 twig of fresh coriander washed, removing all impurities and pat dried (for sauce)
  • 1 Cup of sour cream (for the sauce)
  • 1/4 of Cup of chicken soup (for the sauce)
  • 3 spoonfuls of oil a spoonful for the sauce and two spoonfuls for the enchiladas
  • 1 pinch of Salt
  • 1 pinch of black pepper
  • 8 pieces of Corn tortillas for the enchiladas
  • 2 pieces of chicken breast cooked and shredded for enchiladas
  • 1 Cup of Manchego cheese grated, to decorate

    Preparation

    Preheat the oven to 200 ° C. (392°F)
    For the sauce, boil the tomatoes and chilies until the tomatoes are cooked.
    Blend tomatoes and chiles with onion, garlic, cilantro, cream and chicken stock.
    In a medium saucepan, heat a tablespoon of oil and fry the sauce for 5 minutes over low heat. Season and set aside.
    In a pan, heat the rest of the oil and roll the tortillas one at a time, on both sides a minute to soften. Drain
    Fill the tortillas with the chicken, fold and roll. Arrange them in rows in a oven proof dish and smother them them with sauce and top with cheese.
    Bake au gratin in the oven 5 minutes. Serve.
