Preparation
In a tray put the tomatoes with onion and basil, on top put olive oil, salt and pepper. Let stand for 10 minutes.
In the middle of the tortillas, put on panela cheese, then tomato, onion and basil and then a slice of Manchego cheese, finally cover with another tortilla.
On a tortilla put a layer of peach, an onion, a cheese and ends with an omelet.
In a comal heat the quesadillas already armed until the cheese is melted and tortillas a little browned.
Cut the quesadillas into 4 and accompany them with more basil leaves.
