Prepare these simple quesadillas with Oaxacan cheese, ham and refried beans. They are perfect for breakfast or dinner. They are also accompanied by pico de gallo, avocado and cilantro. Mmm, a delight.

Ingredients

6 portions
  • 1 cup refried beans
  • 12 flour tortillas
  • 6 slices ham
  • 1 1/2 cups Oaxaca cheese, shredding
  • 1/2 cups pico de gallo
  • 1/3 cups cream
  • 1 avocado, in slices
  • 3 tablespoons fresh coriander, finely chopped

Preparation

Preheat the oven to 180 ° C.
Spread beans over 6 tortillas; place them in baking trays, lined with baking paper. Add the ham and cheese; cover them with the remaining tortillas.
Bake for 10 min. or until the quesadillas are hot and the cheese has melted. Cut them in half.
Serve the quesadillas with cilantro, pico de gallo and avocado.

TIPS

You can prepare them in a pan if you do not have an oven.
