This is a delicious recipe for poblano chile tamal with oaxaca cheese and sweet corn. It is a rich option to eat tamales in the candelaria.

Ingredients

15 servings
  • 300 grams of lard (dough)
  • 500 grams of nixtamal corn masa flour sifting (mass)
  • 1/2 Cup of green tomato peels infused water (dough)
  • 1/2 Cup of pork broth
  • 1 tablespoon of baking powder (dough)
  • Salt to taste (mass)
  • 3 poblano peppers Roasted and cut into slices (stuffing)
  • 200 grams of canned corn drained (stuffed)
  • 400 grams of Oaxaca cheese shredding (stuffing)
  • 1 package of corn leaf for soaked tamal

Preparation

Beat butter until white. Add half of the flour and continue beating the dough trying to take off the mantecade edges.
Add the infusion of peels, the rest of the flour and the pork stock, little by little (without stopping to beat).
Integrate the baking powder and salt. Beat until completely mixed.
Arrange a little of the dough with the help of a spoon and spread it on the corn leaf already soaked. In the center, poblano, corn and Oaxacan cheese are placed.
Fold each end of the sheet to cover the tamale and press a little to compact the dough. Finally bend the tip of the blade.
Place the tamales on a steamer for an hour and a half. You can check the tamales if you want. They will be ready when the dough is removed from the leaf.

TIPS

For the infusion of tomato peels: Boil 400 milliliters of water with seven green tomato peels for 10 minutes (previously washed and disinfected), let cool and reserve until needed.
