Mexican eggs are a delicious way to prepare scrambled eggs, with tomatoes, chili and onions.

Ingredients

4 portions
  • 6 eggs, big
  • 4 tablespoons oil
  • 1 cup tomtato, finely chopped, unpeeled
  • 3 tablespoons onion, finely chopped
  • 4 serrano peppers, finely chopped
  • to taste salt

Preparation

Mix the eggs in a bowl and mix them with a little salt (do not whisk them).
Heat the oil in a large skillet. Add the tomatoes, onions, chilies and mix well, fry over low heat. Stir occasionally, for 3 or 4 minutes or until most of the liquid has evaporated.
Add the eggs and stir constantly until firm, about 4 minutes. Serve them immediately with corn tortillas.
