Mole Enchiladas Stuffed with Platano Macho

These rich enchiladas are stuffed with a mixture of ricotta cheese and plantain, bathed in a poblano mole.

Ingredients

4 portions
  • 16 corn tortillas, freshly made
  • 2 plantain, mature
  • 1 cup ricotta cheese
  • 1/4 cups goat cheese
  • to taste black pepper, to taste
  • 1 cup mole concentrate
  • 3 cups chicken soup
  • 4 tablespoons oil

Preparation

Cover the banana with aluminum foil and bake for 30 minutes at 200 degrees Celsius or until well cooked.
While the banana is cooking, mix the mole with the chicken stock and heat in a pot until it starts to boil. Remove from heat and cover to keep warm.
Take the bananas and with a fork or a food processor make a banana puree. Add the ricotta cheese, the goat cheese and mix. Season with salt and pepper.
Heat the oil in a pan and heat the tortillas so that they soften for 30 seconds per tortilla (do not allow them to fry, this is only to soften them).
Fill each tortilla with the banana and cheese mixture and roll it up. Place in a glass baking dish, repeat with all the tortillas to obtain 16 enchiladas.
Bat the enchiladas with the mole sauce and bake for 10 minutes. Remove from oven and serve.

PRESENTATION

Garnish the enchiladas with sesame seeds. Accompany with cream and onion.

TIPS

You can also make this recipe with flour tortillas.

es algo delicioso se ve antojable se ve que es facil algo muy plactico y lleno de sabor pero seria mejor si se ve como se prepara en un video como en otros se ve no tengo que criticar solo es bueno pero seria bueno mostrar como preparar bien el mole y que quede rico paso por por paso como darle un buen sazon
