Nopal Gratin in Bean Sauce

This recipe with nopal is easy, practical and has many benefits for you. The nopal is a plant from Mexico with multiple qualities, considered a vegetable and widely consumed in the central part of Mexico. The nopal has a lot of fiber and nutritional properties such as calcium, iron, water and protein. Although its flavor is already delicious, in this recipe it is combined with pumpkin flower, cheese and a rich bean sauce with chipotle. This is an alternative of flavor and texture for a breakfast or good snack.

Ingredients

6 portions
  • 1/4 cups bacon, finely chopped for the sauce
  • 1/4 onions, chopped into squares for the sauce
  • 1 cup black bean, cooked, for the sauce
  • 2 tablespoons chipotle peppers in adobo sauce, for the sauce
  • 1 cup chicken soup, for the sauce
  • 1/4 cups epazote, for the sauce
  • 2 tablespoons vegetal oil, for the sauce
  • to taste salt, for the sauce
  • 2 tablespoons vegetal oil, for the nopal
  • 8 nopales, clean and whole
  • 3/4 cups Oaxaca cheese, crumbled
  • 1/4 cups epazote, finely chopped
  • enough jalapeño pepper, in plasters
  • 1 1/2 cups pumpkin flower, clean
  • to taste salt
  • to taste black pepper
  • enough pico de gallo, To accompany

Preparation

For the sauce, in a hot saucepan fry the bacon until it is completely browned, add the onion and acitrone. Add the beans, the chipotle chili, the chicken broth and the epazote, cook for 6 minutes. Blend everything until you get a light sauce. Return to the fire over a saucepan with oil and season with salt; cook for 3 more minutes. Reservation.
In a hot pan add the oil, place the nopal and cook for a few minutes. Turn and place the crumbled Oaxaca cheese, the epazote, the chile slices and the pumpkin flower; season with salt and pepper, and cook until cheese is melted.
Serve on a plate, bathe with bean sauce and pico de gallo.

PRESENTATION

Serve a piece of nopal with bean sauce and accompany with pico de gallo.

TIPS

If you want, you can try making these boiled nopales, just make sure the water is hot enough before cooking and cook them for 2 minutes.
