Nopal Gratin in Bean Sauce

This recipe with nopal is easy, practical and has many benefits for you. The nopal is a Mexican plant with multiple qualities, considered a vegetable and widely consumed in the central part of Mexico. The cactus has a lot of fiber and nutritional properties such as calcium, iron, water and protein. Although its flavor is already delicious, in this recipe it is combined with pumpkin blossom, cheese and a rich chipotle bean sauce. This is an alternative of flavor and texture for a breakfast or good snack.

  • 1/4 cups bacon, finely chopped for the sauce
  • 1/4 onions, chopped in squares for the sauce
  • 1 cup black bean, cooked for the sauce
  • 2 tablespoons chipotle peppers in adobo sauce, for the sauce
  • 1 cup chicken soup, for the sauce
  • 1/4 cups epazote, for the sauce
  • 2 tablespoons vegetal oil, for the sauce
  • to taste salt, for the sauce
  • 2 tablespoons vegetal oil, for the cactus
  • 8 nopales, clean and whole
  • 3/4 cups Oaxaca cheese, shredded
  • 1/4 cups epazote, finely chopped
  • enough cuaresmeño or jalapeño pepper, in strips
  • 1 1/2 cups squash blossom, clean
  • to taste salt
  • to taste black pepper
  • enough pico de gallo, To accompany


For the sauce, fry the bacon in a hot saucepan until it is golden brown, add the onion and acitron. Add the beans, chipotle chili, chicken broth and epazote, cook for 6 minutes. Blend everything until you get a light sauce. Return to heat over a saucepan with oil and season with salt; Cook for 3 more minutes. Reservation.
In a hot pan add the oil, place the cactus and cook for a few minutes. Turn and place the shredded Oaxaca cheese, epazote, chili rajas and pumpkin flower; Season with salt and pepper, and cook until the cheese melts.
Serve on a plate, bathe with bean sauce and pico de gallo.


Serve a piece of cactus with bean sauce and accompany with pico de gallo.


If you wish, you can try to make these boiled nopales, just make sure the water is hot enough before cooking them.
