The owls are a hybrid between gratinated muffins and a cake of spicy chilaquiles. They are perfect for breakfast, yielding and very economical. Try them when you are awake, they are wonderful.

Ingredients

  • sauces Home Clemente Jacques ®
  • 4 Mexican french bread rolls
  • 1/2 kilo of Corn tortillas old
  • 1 Cup of refried beans
  • 1 bottle of green sauce Green Clemente Jacques ®
  • 100 milliliters of sour cream
  • 1/4 of Manchego cheese grated
  • 1/2 onion
  • 1 clove of garlic
  • 3 Water approximately
  • 1 branch of fresh epazote
  • sea ​​salt

Preparation

Clean the beans to make sure they do not have any pebbles or small garbage. Place them in a bowl or colander and rinse them under the tap of the tap.
Drain and cook in an express pot with water, enough to cover ¾ parts of the pot.
Chop the onion, add it together with the whole garlic cloves and the epazote. Add a fist of sea salt. Close the pot and cook over medium heat, when it begins to sound, place the pivot. Leave for about 40 minutes, varies from pot to pot.
Once cooked, fry them with a little oil and mash them. Rectify the seasoning.
Cut the rolls in half, spread a little beans on each cover.
For the chilaquiles: Cut the old tortillas into triangles, fry them in plenty of oil.
Heat the Clemente Jacques ® Green Sauce with a cup of water or chicken broth. Let it boil and add the chips. If you like crunchy chilaquiles, do not leave them too long because they will be watered.
Place a little chilaquiles on top of each roll, add a spoonful of cream in each, a little grated Manchego cheese and bake at 120 ° C for 10 minutes or until the cheese is gratin.
Serves warm bathed in Homemade Salsa Clemente Jacques ®.

PRESENTATION

It serves two owls per person bathed in sauce. Place extra sauce for the bravest.

TIPS

Serve fresh from the oven, otherwise the bread will be watered.
