SCRAMBLED EGG ENFRIJOLADAS

Prepare this wonderful and delicious breakfast Enfrijoladas with a creamy and spicy chipotle sauce, stuffed with scrambled eggs. Served with cream, fresh cheese and fried chorizo. This combination is exquisite.

Ingredients

3 portions
  • 1/2 cups oil, for frying enfrijoladas and for egg
  • 1/4 cups white onion, finely chopped
  • 1/2 cups roma tomato , finely chopped
  • 2 serrano peppers
  • 5 eggs
  • 1 pinch salt
  • 1 cup pinto beans, cooked
  • 1/2 cups sour cream
  • 3 chipotle chilies
  • 9 corn tortillas
  • 1/4 cups sour cream
  • 1/4 cups fresh cheese, grated
  • 1/4 cups sausage, fried
  • 2 tablespoons fresh coriander, finely chopped

Preparation

Add a tablespoon of oil to a frying pan over medium heat. Add the onion, tomato and serrano peppers and stir-fry for a couple of minutes. Add the eggs, cook for 10 min or until tender. Season with salt as needed.
Blend the precooked beans with the chipotles and the Mexican crema. Add salt to taste. Cook bean mixture for 10 minutes in a sauce pan.
Fry corn tortillas with vegetable oil until soft. Fill the tortillas with the scrambled eggs and pour the bean sauce on top. Garnish with cooked chorizo (or spicy sausage), and add the Mexican crema, queso fresco, avocado and cilantro to taste.

PRESENTATION

Serve with cream and decorate with cheese, chorizo ​​and cilantro.

TIPS

You can cook the ingredients of the scrambled eggs more crunchy if you like.
