Preparation
Add a tablespoon of oil to a frying pan over medium heat. Add the onion, tomato and serrano peppers and stir-fry for a couple of minutes.
Add the eggs, cook for 10 min or until tender. Season with salt as needed.
Blend the precooked beans with the chipotles and the Mexican crema. Add salt to taste.
Cook bean mixture for 10 minutes in a sauce pan.
Fry corn tortillas with vegetable oil until soft.
Fill the tortillas with the scrambled eggs and pour the bean sauce on top.
Garnish with cooked chorizo (or spicy sausage), and add the Mexican crema, queso fresco, avocado and cilantro to taste.
