Recipe of sweet tamales with homemade raisins. These tamales are traditional in Mexican cuisine, a perfect treat to accompany with a rich cup of atole. You can eat them for breakfast or dinner.

Ingredients

12 portions
  • 1 kilo cornmeal, for tamales
  • 450 grams lard
  • 150 grams sugar
  • 150 grams raisin
  • 1 tablespoon royal baking powder
  • 1 can condensed milk
  • 1/2 cups anise water, boiled
  • 1/2 cups milk
  • 1 bunch tamal corn husk
  • 1/2 cups Water
  • 1/2 teaspoons salt

Preparation

One half teaspoon of anise is boiled in half a cup of water. Strain and mix with the flour, the royal, half a teaspoon of salt, sugar and milk, to form a masita.
Beat the butter until it is white and fluffy; then add the masita, the condensed milk and, if necessary, a little bit of milk.
Beat until a ball of dough floats in a cup of water.
Portions of this mass are taken and wrapped in the leaves that have already been soaked and drained.
Add several raisins and steam them for 1 hour until they are detached from the leaf.

Esos tamale se llaman "canarios". He aquí la receta: Ingredientes 8 piezas de huevo 50 gramos de uva pasa 1 taza de azúcar blanca 1 pizca de sal 250 gramos de queso panela 250 gramos de mantequilla con sal 500 gramos de harina de arroz 1 cucharada de polvo para hornear (levadura química) hojas de elote al gusto Preparación: Poner a remojar las hojas para tamal en agua caliente para que se suavicen durante 10 o 15 minutos. Cernir la harina junto con el polvo para hornear y la sal. Reservar. Acremar la mantequilla con el azúcar en un tazón utilizando una batidora eléctrica. Agregar los ingredientes secos y continuar batiendo. Añadir los huevos y el queso rallado y continuar batiendo con la pala o a mano hasta integrar. Para armar los tamales, colocar dos cucharadas de masa dentro de la hoja, poner unas pasitas como relleno y envolver. Cocer en la vaporera durante 40 minutos o una hora hasta que la masa se despegue de la hoja. Servir calientes. Fuente: cocinaycomparte.com
