Ingredients

8 servings
  • 6 beets
  • 1 tablespoon of sugar
  • 8 carrots
  • 10 oranges
  • 6 apples green or red
  • 3/4 of Cup of orange juice
  • 1 1/2 cups of roasted peanuts
  • 3 cups of Romaine lettuce
  • 2 jicama
  • 4 radishes

    Preparation

    Peel and cut the beets in cubes, put them to cook in a pot with enough water. Once cooked you can reserve a cup of water where they were cooked for dressing.
    Wash, peel and cut the carrots into small squares and cook them in a pot with water and a fist of sea salt.
    Peel the apples, remove the center and cut them into small cubes. Then peel the jicamas and cut them into thin canes.
    Remove the peel to the oranges and remove with a sharp knife the segments, removing the white part that is very bitter.
    Place all the fruit and vegetables in a salad bowl. Pour into the cup of beet cooking water (optional), orange juice and roasted peanuts. Plasticize and refrigerate for 2 hours.
    Put a bed of lettuce in another bowl, place the salad in the center and garnish with sliced ​​radishes.

    PRESENTATION

    Serve in a large platter so that everyone is served at the time of sitting at the table.
