Preparation
We put to hydrate the gelatin with half the water for about 5 minutes
With the rest of the water we make a syrup, placing in a pot the 400 grams of sugar with the essence of your preference, over medium heat stirring constantly until you get a syrup.
Once the syrup is smooth, remove from the heat, add the gelatin to hydrated and bring it back to medium heat for about 2 minutes.
Then we will pass the preparation to a bowl, letting it rest for 5 minutes.
While the preparation is cooling, we sprinkle a surface (a dish, figured silicone mold or meson) with the impalpable sugar or cornstarch. If you choose a mold of figures you have to completely cover the mold to avoid sticking.
When the 5 minutes have passed, we beat with a mixer at maximum speed for 10 or 15 minutes, obtaining a merengue.
Now ready put the mixture in a pastry bag and line (in my case) in a flat dish previously sprinkled with icing sugar or cornstarch, then smoothly sprinkle again over to cover. Let stand at room temperature for 4 hours. Cut the size of your preference.
