Preparation
Chop the pineapple in small cubes, reserve a little of the syrup.
In a bowl mix the corn masa with the butter at room temperature.
Add the sugar and beat until it begins to sponge, add the pineapple and dehydrated raisins (optional).
To make the version of Patricio Estrella paint half of the dough with red vegetable dye to get a pink tone.
Spoon a tablespoon of the dough on top of a corn husk (previously softened in hot water 1 hour). Perfectly wrap and close the tamale, place it inside a pot for bain marie or steamer for tamales preferably. Do the same with the rest of the dough.
Cover the steamer and let it cook for about 50 minutes, you will know that they are ready when the dough comes off without a problem of the leaf.
