These rich cornstarch cookies are filled with dulce de leche and covered with chocolate.

Ingredients

20 portions
  • 200 grams flour
  • 300 grams cornstarch
  • 200 grams butter
  • 2 teaspoons baking soda
  • 150 grams sugar
  • 1/2 teaspoons baking soda
  • 3 eggs
  • 1 tablespoon cognac
  • 1 teaspoon vanilla essence
  • 2 cans dulce de leche (caramel), 410 grams each
  • 400 grams bittersweet chocolate

Preparation

In a deep bowl, mix flour, cornstarch, baking soda and baking powder.
In another deep bowl beat the manetquilla with the sugar with an electric mixer until a fluffy mixture is obtained.
Add the egg yolks to the manetquilla mixture, the cognac, the vanilla essence and the dry ingredients, beat by hand with a balloon whisk.
Flour a clean surface and stretch the dough on it until it is 1/2 cm thick.
With a 4 cm circular cookie cutter cut out the cookies.
Preheat the oven to 150 degrees Celsius.
Place the cookies in baking trays greased with vegetable spray and bake for 10-15 minutes or until they barely begin to brown.
Remove the cookies from the oven and remove from the pan with a spatula while still hot.
Form the alfajores by taking two cookies and joining them with the dulce de leche. Repeat with all the cookies.
Melt the chocolate in a bain-marie.
With a pastry brush, paint the top lid of each alfajor with the chocolate and refrigerate for at least 30 minutes before serving.

PRESENTATION

These cookies can be an excellent gift, just place them in bags with ribbons or decorative boxes.

TIPS

The cookies must be floury and are very delicate. It is very important to cook at a low temperature.
