Surprise your family with these delicious chocolate amaranth calaveritas this day of the dead. They are the perfect sweet, rich and colorful. The best part is that you can do it in advance.

Ingredients

6 portions
  • 1 cup amaranth
  • 1 cup dark chocolate
  • 2 egg whites, for the glaze
  • 1/2 teaspoons lemon juice
  • 1 1/2 cups powdered sugar, to decorate

Preparation

In a bowl, mix the amaranth with the chocolate very well.
Pour the mixture into the molds for calaveritas and compact. Refrigerate 40 minutes until firm. Release and reserve.
For the glaze, beat the whites to form soft peaks. Add the lemon juice and the icing sugar little by little while stirring. Continue beating until you have a firm consistency.
Divide the glaze in different bowl and paint with the vegetable dyes. Place in cornets made of waxed paper and decorate each skull.
Let dry 20 minutes and enjoy.

PRESENTATION

Decorate with icing.

TIPS

You can use meringue powder for glaze, it makes it more stable. Use gel dyes to prevent the glaze from losing consistency or changing its flavor.
