The angel cake, known in the United States as "Angel Food Cake" was very popular during the 19th century. It is said to be the angels' food cake because of its soft and fluffy texture.

Ingredients

10 portions
  • 1 3/4 cups sugar
  • 1/4 teaspoons salt
  • 1 cup flour
  • 12 egg whites
  • 1/3 cups Water
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons cream of tartar

Preparation

Preheat the oven to 180ºC (350ºF).
In a food processor, process the sugar until it is super fine, about 2 minutes.
Put half the sugar with the flour and salt and mix well. Set aside the rest of the sugar.
In a large bowl, use a balloon whisk to mix the egg whites until stiff, then add the vanilla extract and cream of tartar. After mixing by hand for 2 minutes, use an electric mixer and add water.
Gradually add the reserved sugar, beating at medium speed.
Once the mixture has smooth peaks, add the flour mixture little by little, mixing with a spatula and using enveloping movements.
Pour the mixture in a previously greased cake pan.
Bake for 35 minutes or until when a toothpick is inserted into the cake, it comes out dry.

PRESENTATION

Serve the cake with whipped cream and cut strawberries.

TIPS

To make it easier to separate egg whites from eggs, use the freshest eggs you have!
