Preparation
In a deep bowl, soak the raisins in the rum for 1 hour or until they are chubby.
Preheat the oven to 180 degrees centigrade. Prepare a circular baking dish with butter and flour.
In an electric mixer , mix flour, baking powder, baking soda and spices. Add the sugars, butter, eggs and vanilla and continue whisking.
Add the apple, the walnut, the ginger and the raisins.
Pour the mixture into the baking dish and bake until a toothpick comes out clean (about 1 hour).
Remove the cake from the oven and allow it to cool before unmolding.
