This chocolate souffle has a fluffy and light texture. The taste of chocolate is delicious without being too cloying.


6 portions
  • 200 grams bittersweet chocolate
  • 4 tablespoons unsalted butter
  • 1 1/2 teaspoons vanilla extract
  • 3 egg yolks
  • 3 tablespoons Water
  • 300 cups sugar
  • 8 egg whites, at room temperature
  • 1/2 teaspoons lemon juice
  • powdered sugar, to decorate


Grease six souffle cups with butter. Cover with sugar and put in the freezer.
Preheat the oven to 200 degrees and place the rack in the bottom of the oven.
Put the chocolate and butter in a bain-marie (in a bowl over a pot of boiling water) to a couple of centimeters of boiling water (not touching the water). Wait for it to melt while stirring so it does not burn.
Remove the chocolate from the heat and add the vanilla extract.
Mix the egg yolks and hot water in the blender and beat well.
Gradually add 2 tablespoons of sugar and beat for 5 minutes.
Carefully add the yolks to the previously melted chocolate mixture.
Remove the molds from the freezer.
Put the egg whites in a clean bowl for the blender and add the lemon juice.
Beat until the whites are fluffed and gradually add 1/2 cup of sugar, raising the speed of the blender .
Beat the whites until peaks form.
With care and speed (so that the egg whites do not fall) add the whites to the chocolate mixture, with enveloping movements.
With a spoon fill the souffle molds and place them on a cookie sheet.
Bake immediately until the souffle is inflated and browned a little above, between 18-20 minutes.
Take out of the oven sprinkle with icing sugar and serve immediately!


The souffles are lowered as soon as they come out of the oven, therefore, it is important that everything is ready to serve them as soon as they leave.
