Ingredients

10 portions
  • 6 egg whites
  • 450 grams sugar
  • 1 tablespoon cream of tartar
  • 2 lemons, its juice
  • 1/2 cups Water

Preparation

Put in a saucepan the sugar, lemon juice and water. Cook until it is about to syrup (you should not touch, if you put a spoon or stir it does not go well). Be careful not to burn.
Put the egg whites with the cream of tartar in the blender and beat until they are hard. At that time, empty the syrup prepared with the sugar. Note: the syrup is added while the blender is in motion. The more you beat the bitumen, the harder it will stay.

TIPS

You can substitute lemon juice for vanilla extract.
