This easy recipe of Blackberry and Cheese Empanadas is a delicious dessert to prepare. The cheese helps the homemade blackberry marmalade not be so sweet and in this way you don't get a very cloying taste when eating them. Ingredients

12 servings
  • 2 cups of blackberry
  • 1 Cup of sugar
  • 1 tablespoon of lemon juice
  • enough of flour to extend
  • 350 grams of puff pastry
  • 1/2 Cup of cream cheese in cubes
  • enough of egg to varnish
  • enough of powder sugar to decorate

    Preparation

    Preheat the oven to 200 °C. (392 °F)
    In a pot cook the blackberries with sugar for about 30 minutes over low heat or until it has a thick consistency, add the lime juice and mix well. Let cool and set aside.
    On a floured surface, extend the puff pastry about 3 mm thick and with a round cutter of 10 cm (4 inches) diameter cut discs.
    Fill the pastry dough discs with blackberry marmalade and cream cheese, close and fold with your hands, place on a tray and varnish with egg.
    Bake 20 minutes or until golden, let cool and decorate with powdered sugar.

    PRESENTATION

    On a table, decorated with powdered sugar and accompanied by a glass of cold milk.

    TIPS

    Leave the blackberry marmalade thick enough to hold the baking in the oven. The puff pastry should remain cold while you work it, so the layers are separated correctly and you will get more crispy empanadas with defined layers.
