Blueberry Cupcakes with 3 Wines Sauce

  • 1 sheet puff pastry, from 500 to 700 gr
  • 250 grams cranberry , dehydrated
  • 6 slices panela cheese, or cream cheese
  • cinnamon powder, to taste
  • almonds, filleted
  • 1/4 cups Red wine, White and pink
  • 6 whole cloves
  • 1 1/2 cups sugar
  • 1 lemon, get the juice
  • 1 egg, to varnish


Preparation of 3 wine sauce: Boil the 3 wines with sugar, lemon juice and 6 cloves to reduce this to half or remain its consistency of honey, not very thick. In the course of cooking, the cranberries are submerged for 10 minutes to hydrate and absorb the taste of the wine, they are taken out to cool and the excess liquid is removed and they are reserved for the time of filling the cupcakes.
Stretch the puff pastry and stretch it with the help of a rolling pin or rolling pin. Cut the dough into circles of 15 cm. approximately. Lightly beat the egg and spread the edges of the circles. Place half a slice of panela or cream cheese in each circle, put the blueberries on top of the cheese (previously hydrated for 10 minutes in the wine we put to reduce), sprinkle with a little cinnamon powder and sliced ​​almonds (optional ) fold the edges up, pressing lightly so that they join. Paint the upper part of the cake with egg.
Place on a tray and bring to a preheated oven 180 ° C for about 25 to 30 minutes, until the top part is browned.


Serve the cupcake bathed with the sauce of 3 wines.
