For this Christmas season, prepare this delicious Christmas cake with coconut. It has an intense coconut flavor and a fluffy and smooth texture. It is a perfect cake to take to Christmas dinner, do not stop trying it.

Ingredients

12 portions
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoons salt
  • 2 cups granulated sugar
  • 3/4 cups butter, without salt at room temperature
  • 1/4 cups vegetal oil
  • 1 1/3 cups coconut milk
  • 2 eggs
  • 1/2 teaspoons extract , coconut
  • 1/2 teaspoons liquid vanilla
  • 4 egg whites
  • 1/4 teaspoons Cream of tartar
  • 1 1/2 cups cream cheese, (for coconut polish)
  • 3/4 cups unsalted butter, at room temperature (for coconut bitumen)
  • 1 teaspoon coconut essence, (for coconut polish)
  • 5 cups powdered sugar, (for coconut polish)
  • 1 1/2 cups grated coconut, (for coconut polish)

Preparation

Preheat the oven to 180 ° C.
Sift flour, baking powder and salt through a sieve.
Mix butter, sugar and vegetable oil.
Separate the egg yolks and add the egg yolks to the blender .
Add the essence of coconut and vanilla.
Add 1/3 of the flour mixture and half of the coconut milk, repeat until everything is incorporated into the blender .
In a separate bowl, beat 6 egg whites together with the cream of tartar, beat until firm peaks.
Integrate the egg whites to the mix in the blender in an enveloping way.
Grease two cake molds of the same size and cover them with flour.
Divide the mixture in equal parts between the molds and bake at 180 ° C for 20-25 minutes or until when inserting a toothpick, it comes out clean.
Take out of the oven and let it cool down.
For the bitumen: Place the cream cheese and butter in the blender . Beat until smooth and without lumps. Add the coconut essence and the previously sifted icing sugar. Spread a light layer of bitumen over one of the cakes, place the other cake on top and finish covering the entire cake with the coconut polish. Cover the cake with the grated coconut.

PRESENTATION

Serve a slice and serve with coconut milk.

TIPS

Before desoldering the cakes, allow them to cool properly.
