Preparation
Grease a mold with butter and waxed paper.
Sift the flour inside a bowl, make a hole in the center, chop the yeast inside and mix by adding little by little the sugar, milk and flour.
Let stand for 15 minutes. In a separate bowl beat the butter with the 5 egg yolks, adding the spices and the lemon zest. Add to the bowl with the other mixture, stirring until the dough bubbles, leave to ferment 15 minutes more.
Add caramelized orange and lemon rinds together with the raisins.
Mix all the ingredients and form a ball: Empty in the mold and let stand 15 minutes. Spread the surface with the remaining yolk.
Bake in the lower part of the oven, preheated to 200 ° C, for approximately 90 minutes.
Allow to cool inside the mold and unmold. Sprinkle with icing sugar and decorate with caramelized orange slices and a slice of cinnamon.
