This Swedish pancake cake is ideal for a birthday party and children's favorite, use only the thinnest crepes.

Ingredients

6 portions
  • 6 Hotcakes, made with 1/2 portion of dough for crepes
  • 200 milliliters milk cream, thick
  • 250 milliliters sour cream
  • 3 tablespoons powdered sugar
  • 1/4 teaspoons vanilla extract
  • 250 raspberries
  • powdered sugar, at your service

Preparation

Beat the cream until it forms peaks. Mixed with sour cream, powdered sugar (icing sugar) and vanilla extract. Reserve 4 tablespoons to decorate the cake.
Separate a handful of raspberries. Lightly mash the rest of the fruit with a fork and add it to the cream mixture, integrating it just a little to create a wavy effect.
Arrange a hotcake on a plate, spread over it a fifth of the cream and cover with another hotcake. Continue adding layers to use all the hotcakes and all the cream.
Decorate the cake with the reserved mixture, distribute the reserved raspberries, sprinkle icing sugar and serve.
