Ingredients

8 portions
  • 130 grams butter
  • 240 grams powdered sugar
  • 170 grams White chocolate
  • 250 milliliters milk
  • 7 milliliters liquid vanilla
  • 300 grams wheat flour
  • 6 grams baking soda
  • 3 grams salt
  • 5 egg whites
  • 400 grams whipping cream
  • 140 grams White chocolate
  • 5 milliliters vanilla extract
  • cranberries, and red fruits to taste
  • 15 grams natural gelatin
  • 100 grams cocoa butter
  • rose petals, organic

Preparation

The oven is preheated to 160 degrees Celsius. Butter and sugar are added until they turn whitish.
The chocolate is melted in a bain-marie and added to the mixture of butter and sugar.
Add flour, royal and salt, previously sifted, alternating with milk and vanilla
The whites are placed on nougat and added to the previous mixture.
Pour into a mold of 23 x 23 cm, previously greased and floured and baked for 30 min at 180 degrees Celsius, the stick test is performed to corroborate its cooking
To prepare the white chocolate cream the vanilla cream is boiled
The cream is poured over the chocolate and is integrated with a balloon manually. It is recommended to prepare it a day before.
To assemble the cake, cut the cake in half and place the white chocolate cream accompanied by red berries. The cake with the cream is covered in its entirety

PRESENTATION

You can varnish some rose petals with cocoa butter and a little red fruit. By doing this with the petals, we will intensify its velvety texture to the eye

TIPS

- Finishing adding the flour, stops the mixture shake - For better results it is recommended not to change the milk for yoghurt - At the time of assembling the egg whites starts with half of this and the rest is added when noticing a bit of foam
