This is an ideal recipe for people who enjoy a good carrot cake but do not have an oven or prefer to make an easier version of this delicious dessert.

Ingredients

8 portions
  • 4 carrots
  • 140 grams sugar
  • 2 eggs
  • 200 grams flour
  • 1 teaspoon baking soda
  • 2 tablespoons cinnamon powder
  • 1 tablespoon ground ginger
  • 4 tablespoons caramelized ginger, optional
  • 200 milliliters skim milk
  • unsalted butter, to grease the pan

Preparation

First you should start by washing, peeling, grating the carrots and boiling them in boiling water for about 5 minutes.
Then mix the eggs and sugar in a bowl. Once well mixed, add the milk, the melted butter, the sifted flour, the powders, the cinnamon and the ginger until all your ingredients are well mixed. Reservation.
Remove the water from the carrots and add them to the mixture you reserved.
Grease the pan with the spray on all sides so that the cake will not stick. You can help with a napkin so that it is well distributed and without excess. When it is hot, pour the cake mixture.
The first two or three minutes of cooking should be on high heat, then lower the heat and let the bread cook for an hour. Cover the pan for the first 30 minutes, then remove the lid and finish cooking as well. When you see that the preparation is semi-dry (as in the photo), turn the cake in the same way you do with the tortillas and continue cooking over low heat.
When it is ready, carefully unmold it and wait until it is cold to serve it.

PRESENTATION

You can decorate it with cream cheese bitumen.

TIPS

Do not forget to use a lid for the pan to cook evenly, and remember how it takes baking powder you must leave the space in the pan (mold) for the cake to grow.
