Preparation
Grind the cookies and add the melted butter. Place this mixture in the bottom of the mold and crush, looking to cover the entire surface of the mold.
In a bowl, combine the grenetine and ¼ cup of sugar. Pour the hot water and beat until the ingredients are incorporated. Let it cool.
Beat the cream cheese with ¼ cup of sugar.
Add the ground pistachios to the cream cheese mixture and beat. Add the gelatin and continue beating until the mixture thickens.
Add the green dye. Place this mixture in the mold with the cookies. Refrigerate from 2 to 4 hours.
Place the sugar in a pan over low heat. Pour the cup of whole pistachios into a silicone mat. Once the sugar is liquid, pour it over the pistachios. Once the sweet is cold, break it with your hands.
Once the cheesecake has set, remove it from the mold and decorate it with the piqué pistachios.
