Ingredients

8 portions
  • 6 packages cream cheese, (190 g c/u) or (6.7 oz each)
  • 4 eggs
  • 1/2 cups no-calorie sweetener , or stevia
  • 1/4 cups lemon juice
  • 1 tablespoon liquid vanilla
  • 1/2 cups red fruit, to decorate
  • 1 twig peppermint, to decorate

Preparation

Preheat the oven to 180 ° C. (356 °F)
In a bowl beat the cream cheese with the egg, the sweetener, the lemon juice, the lemon zest and the vanilla essence until you get a smooth and creamy mixture.
Pour the mixture into a mold, bump lightly to let the air escape and flatten with a spatula.
Bake for 40 minutes covered until it forms a consistency.
Chill in refrigerator and decorate with red fruits in the center along with mint. Serve a slice and enjoy

PRESENTATION

Serve with fresh fruit.

TIPS

You can make a fruit sauce, cooking them with a little water and honey.
