Ingredients

12 servings
  • 1 Cup of pecan in halves
  • 2 spoonfuls of flour
  • 170 grams of bittersweet chocolate
  • 8 spoonfuls of unsalted butter softened cut into cubes
  • 3/4 of Cup of sugar
  • 1/8 of teaspoonful of Salt
  • 4 pieces of egg
  • pieces of powder sugar
  • 1 Cup of whipping cream (light whipped cream)
  • 1/2 teaspoonful of vanilla extract (light whipped cream)
  • 2 teaspoons of sugar

    Preparation

    Preheat the oven to 175 ° C. Gumming a removable round cake pan. Spread the nuts in a baking dish and bake for 7 - 10 minutes, stirring occasionally until they acquire a toasted color and aroma. Remove from the oven and let cool.
    Change the temperature to 188 ° C. In a food processor, grind the nuts with the flour. Put the chocolate in a bain marie, and stir occasionally to begin to melt. Remove from heat and stir until the chocolate melts completely and is soft. Add the butter, sugar and salt. Beat with the electric mixer at medium speed until the butter is completely melted and the mixture has thickened.
    Beat the eggs one by one at high speed for a minute or two, or until the mixture is light and airy. Mix with nuts and flour. Pour the mixture into the prepared mold. Bake for 30 - 35 minutes or until when introducing a wooden stick it comes out almost clean. Remove from the oven and let cool.
    With a spatula or dull knife, go through the contour of the cake to loosen it. Allow to cool completely. Unmold and put in a cake base. Sprinkle with icing sugar. Slicing and serving with a little Light Whipped Cream, if desired.
    Light whipped cream: With a balloon whisk, assemble the cream with the vanilla extract. Gradually add the sugar and beat until it has the consistency of whipped cream but is not too stiff.
