This recipe is designed because I adore Christmas and I am a fan of pastry and I love experimenting with different textures and flours, trying to use the most natural ingredients to decorate in a very striking and beautiful way inspired by my 2 babies.

  • 1 cup rice flour
  • 1 cup whole wheat flour
  • 1/2 cups pancake, integral
  • 100 grams almond
  • 1 cup buttermilk
  • 3/4 cups oil
  • 4 eggs
  • 1 cup raw sugar
  • 4 tablespoons powdered sugar
  • 1 tablespoon vanilla essence
  • 1 1/2 tablespoons ground ginger
  • 2 tablespoons cinnamon powder
  • 1 pinch salt
  • 1/2 tablespoons baking soda
  • 2 tablespoons baking soda
  • 100 grams cranberry
  • 1 bag colored candy
  • 1/4 cups grated coconut
  • green food coloring
  • 1 carambola
  • 1 pomegranate
  • 1 stick cream cheese


Preheat the oven to 180ºC. In a large bowl Sift the rice, wholemeal and hotcake flours, add the pinch of salt, baking soda, cinnamon, ginger and baking powder.
With the food processor crush the almonds for about 2 minutes to form a flour and incorporate in the powders.
With the blender at low speed pour the oil and add one by one the eggs and then the sugar and vanilla and finally the buttermilk to form a homogeneous mixture.
Gradually add the flour in the liquid mixture to form a homogeneous mixture.
In the homogeneous dough, incorporate the blueberries in an enveloping way
Grease the two molds and pour the mixture, bake for 50 min until firm.
While the dough is cooking, soften the cream cheese with the icing sugar until it is soft and easy to spread. Paint a part of the grated coconut with green vegetable paint. In a pan brown a quantity of coconut.
Let the cake cool for 30 minutes. For white decoration. Spread the cream cheese and add the white shredded coconut, decorate with the pomegranates and cut the carambola to insert with a toothpick a star on the tip, the leg of the tree decorate it with golden coconut.
For decoration in Green Spread the cream cheese and add the grated coconut painted green, decorate with grenades and lunettes and cut the carambola to insert with a toothpick a star on the tip, the leg of the tree decorate it with golden coconut.


The buttermilk is prepared by heating a cup of milk and adding half a lemon. Check the cake that does not burn by inserting a toothpick and if it comes out dry it is ready Use your imagination to decorate it to your liking.
