This lemon cake is fluffy and smooth, with a rich yellow lemon glaze that gives it a special touch. It is a perfect cake for a birthday or for an important celebration.

Ingredients

8 servings
  • 1 1/4 cups of Butter plus a spoonful to grease the mold. At room temperature.
  • 1 1/4 cups of sugar
  • 3 eggs
  • 1 tablespoon of lemon zest
  • 2 1/4 cups of flour plus two tablespoons to flour the mold.
  • 1 tablespoon of baking soda
  • 1 teaspoonful of baking powder
  • 1 pinch of Salt
  • 1 Cup of milk
  • 1 teaspoonful of vanilla
  • 3/4 of Cup of powder sugar (for the glaze)
  • 1 egg white (for the glaze)
  • 1 yellow lemon (for the glaze)
  • 2 drops of Red food dye (for the glaze)

    Preparation

    Preheat the oven to 180 ° C.
    Grease and flour a cake mold. Reserve.
    In an electric mixer , butter is added. Incorporate sugar, eggs and zest. Add the dry alternating with milk and vanilla, mix until you have a smooth and homogeneous mass.
    Empty the mixture in the mold and bake for about 30 minutes or until a toothpick is inserted, it comes out clean. If not, bake for 10 more minutes. Let it cool.
    For the glaze, in a small bowl mix the icing sugar with the egg white until obtaining a thick consistency. Add little by little the lemon juice to give flavor and coloring. Let stand.
    Once the pancake is cold, unmold and decorate with lemon glaze. It serves.

    PRESENTATION

    Garnish with the glaze and a little lemon zest.

    TIPS

    Pass the dry ingredients through a sieve so that they are better incorporated into the preparation.
