If you want an easy and fresh dessert, we offer this delicious lemon cheesecake recipe without baking in an oven, with a crunchy biscuit base and a creamy mango flavor filling with a hint of yellow lemon.

Ingredients

10 servings
  • 1 Cup of butter cookie for the crust
  • 1 Cup of granola for the crust
  • 1 tablespoon of yellow lemon zest for the crust
  • 3/4 of Cup of Butter melted, for the crust
  • 2 cups of mango
  • 1 Cup of condensed milk
  • 2 spoonfuls of yellow lemon juice
  • 1 tablespoon of vanilla
  • 4 cups of cream cheese
  • 1 Cup of whipping cream
  • 1 tablespoon of yellow lemon zest
  • 3 envelopes of unflavored gelatin (7 gc / u) hydrated and melted
  • to taste of whipped cream to decorate
  • 3/4 of Cup of Orange marmalade
  • 2 cups of mango in large cubes, to decorate
  • 1 branch of mint to decorate

Preparation

For the base, in a food processor, process the cookies and granola until you get a fine powder. Add the zest and butter and process a minute more until you get a masita or dough.
Pour the crust base into a cake mold 20 cm in diameter with wax paper, compact with the help of a spoon and reserve.
For the cheesecake, blend the mango with the condensed milk, the yellow lemon juice and the vanilla until a homogeneous mixture is obtained.
Meanwhile, beat the cream cheese with the cream to beat until you get a homogeneous mixture, add the grated zest, the mango mixture and the greenery, whisk until completely integrated.
Pour the cheesecake mixture on the cookie base and spread well with the help of a spatula. Refrigerate around 2 hours in the Samsung Family HubTM refrigerator or until set.
Unmold the cheesecake, form an edge with whipped cream on the top and pour the orange marmalade in the center, add the mango cubes, decorate with a sprig of mint. Refrigerate until serving.
Cut into slices and serve.

PRESENTATION

Decorate the cheesecake with mango cubes and whipped cream.

TIPS

Blend the jam with a few drops of water to obtain a smoother mixture. If you can not find natural mango you can use mango in syrup.
