Ingredients

12 portions
  • 3 cups flour
  • 4 teaspoons baking soda
  • 1/2 teaspoons salt
  • 2 sticks unsalted butter, at room temperature (about 1 cup)
  • 2 1/3 cups sugar
  • 5 egg whites, at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups milk, at room temperature
  • red gel food color, yellow, green, blue and purple
  • 6 egg whites, (bitumen)
  • 450 grams sugar, (bitumen)
  • 1 tablespoon cream of tartar, (bitumen)
  • 2 lemons, your juice (bitumen)
  • 1/2 cups Water, (bitumen)

Preparation

Preheat the oven to 175 ° C. Put butter in a round pan to avoid sticking the cake. It will be used once for each layer of color.
Mix flour, baking powder, salt and reserve. With the aid of a blender , beat the butter with the sugar until it sponges a little. Gradually add the egg whites and mix very well.
Add the vanilla extract until well incorporated. Go adding the flour and milk (alternating each one, starting with the flour and ending with the milk) until the dough is well combined.
Divide the dough into different bowls into six equal parts. Add the dye to each bowl, beat well, until all the dough is impregnated with the dye.
Serve the mixture of each color on the mold to which you anointed the butter (individually) and bake for 15 minutes or until each cake is well cooked.
Let each cake cool before assembling. First put a layer of cake and then a bitumen. The order of colors is purple, blue, green, yellow, orange and finally red.
Cover all the cake with white bitumen and refrigerate for 30 minutes. Remove from the refrigerator and cover with the remaining bitumen. Make sure that the bitumen is smooth.
For the bitumen: Put in a saucepan the sugar, the lemon juice and the water. Let cook without stirring or anything, taking care not to burn, until a syrup forms.
Gather the egg whites with the tablespoon of the cream of tartar and beat until they are hard. Empty little by little (while you're beating) the syrup you made previously. According to the consistency that you want the bitumen, it is the time that you must beat.

PRESENTATION

If you're going to serve it on a pie plate, I recommend you cut the first slice so that the colors shine.
