Enjoy this summer with a very refreshing dessert: a soft cake, filled with cheese with a touch of lime and a combination of very tropical fruit such as coconut, strawberries, kiwi and peach. This colorful dessert will become your favorite.

Ingredients

10 portions
  • 6 egg whites
  • 1/4 cups sugar
  • 6 egg yolks
  • 1/4 cups sugar
  • 1 teaspoon liquid vanilla
  • 3/4 cups flour
  • 1/4 cups butter, melted
  • enough powdered sugar, to roll up
  • 3 packages cream cheese, 190g each for the filling
  • 1/2 cups whipping cream, for the filling
  • 1/2 cups powdered sugar, for the filling
  • 1 tablespoon lemon zest, for the filling
  • 1 tablespoon lemon juice, for the filling
  • 1/4 cups grated coconut, toasted
  • 1/4 cups peach in syrup, for the filling
  • 1/4 cups strawberry, for the filling, washed,and diced
  • 1/4 cups Kiwi, cut into cubes
  • to taste strawberry, to decorate
  • to taste Kiwi, to decorate
  • to taste blueberry, to decorate
  • to taste peppermint, to decorate
  • to taste grated coconut, to decorate

Preparation

Preheat the oven to 180 °C. ( 356°F)
Beat the egg whites with sugar until they double in size. Set aside.
Beat the yolks with the rest of the sugar and the vanilla essence until they change color, integrating the egg whites to the yolks in a soft and folding way.
Add the flour and ground almonds with a strainer or sieve to the previous preparation, pour the melted butter in a slow stream and integrate in an folding manner.
Pour the mixture on a tray with waxed paper, spread and bake for 8 minutes.
Sprinkle some powdered sugar on a dishtowel and place the cake, remove the paper and roll it still hot, let cool.
For the filling, beat the cream cheese with the whipping cream, the powdered sugar, the lime zest, the lime juice and divide it into two parts.
Unroll the roll and add a portion for the filling, with a spatula, add the grated coconut, the peach, the strawberries and the kiwi. Roll up again and refrigerate the hour.
Cover with the rest of the filling, decorate with fruit, mint and coconut. Serve and enjoy.

PRESENTATION

Garnish with roasted fruit, mint and coconut.

TIPS

Don't let the cake cool too much, as it is too damp it could stick on the towel and break.
