Piña Colada 3 Leches Cake

Bake and decorate this delicious soft and fluffy cake, moistured with a mixture of piña colada, milk, coconut cream, pineapple juice and a little bit of rum. It is covered with a coconut and cream cheese frosting; it is spectacular.

Ingredients

12 servings
  • 2 1/8 sticks of butter for the cake
  • 3/4 of cup of sugar for the cake
  • 1/2 cup of condensed milk for the cake
  • 5 eggs for the cake
  • 3/4 of cup of flour sifted, for the cake
  • 1 teaspoon of baking soda for the cake
  • 1/2 cup of evaporated milk for 3 milks
  • 1/2 cup of coconut milk for 3 milks
  • 1/2 cup of coconut cream for 3 milks
  • 1/2 cup of pineapple juice for 3 milks
  • 1/2 cup of Rum for 3 milks
  • 1/2 cup of coconut cream for frosting
  • 1/4 of cup of whipping cream for frosting
  • 190 grams of cream cheese for frosting
  • to taste of grated coconut and toasted, to decorate
  • to taste of pineapple cut into triangles
  • to taste of cherries to decorate

Preparation

Preheat the oven to 180° C (350° F).
Beat the butter with the sugar until it reaches a pale and light texture. Add the condensed milk and the eggs one by one. Sift the flour and baking powder into the mixture. Mix until incorporated.
Pour it into a cake mold and bake for 30 minutes. Let it cool.
Mix the coconut milk, the coconut cream, the pineapple juice and rum. Reserve.
Beat the coconut cream with the heavy whipping cream and the cream cheese.
Moisten the cake with the milk mixture and decorate with the frosting, pineapple, cherries and coconut flakes.

PRESENTATION

Cover with the frosting and decorate with pineapple, cherries and toasted coconut.

TIPS

Multiply the ingredients of the recipe x 2 if you have a larger mold.
