This delicious cake is a different way to make a recipe with three milks, but with all the flavor of an corn bread. For this cake, you will also add a touch of rompope to enhance the flavor. Ingredients

  • 3 cups whole kernel corn
  • 2 cups flour
  • 1 1/2 cups sugar
  • 10 eggs
  • 2 cups butter
  • 2 teaspoons liquid vanilla
  • 1 1/2 cups evaporated milk
  • 1 1/2 cups whole milk
  • 3/4 cups condensed milk
  • 3/4 cups eggnog
  • 1 1/2 cups whipping cream
  • 2 cups eggnog
  • 4 cups White chocolate
  • 125 grams almond, in stub
  • 1 tablespoon flour
  • 1/2 cups sugar
  • 1 tablespoon butter, melted
  • 2 egg whites
  • enough whole kernel corn, to decorate

Preparation

For the cake, blend the corn kernels, the flour, the sugar, the egg, the butter and the vanilla; Distribute the mixture between two 15 cm diameter molds and bake for 25 minutes, at 180 ° C. Reservation.
For the three milks, mix the evaporated milk, the whole milk, the condensed milk and the rompope. Reservation.
For the ganache, heat the whipping cream and the rompope, add the white chocolate and mix for 5 minutes, until melted. Cool and beat to make the mixture creamier.
For almond tiles, combine almond, flour, sugar, butter and egg white. On a tray with a silicone mat or waxed paper, place a portion of the tile and spread. Bake for 10 minutes at 190 ° C, cool.
To assemble the cake, bathe the cake with the mixture of 3 milk of rompope. Place a layer of cake and cover with the ganache, add the next layer and repeat. Decorate with a spatula and make pom poms with a duya. Add almond tiles in the way you like and corn kernels.

PRESENTATION

Shape the ganache with a spatula, you can make pom poms with a curly duya. Garnish with almond tiles and corn kernels.

TIPS

You can add 2 teaspoons of baking powder if you want it to be more fluffy. Shape almond tiles as you like before they harden.

Recomiendo hacer la receta con la mitad de los ingredientes. Sobra mucho betún y líquido de 3 leches, y la masa es para un molde de 26 cm, pero el sabor es delicioso
