Milk, sugar, vanilla essence, cinnamon stick and bicarbonate are placed in a saucepan and simmer for about 35 minutes while stirring.
When the first boil, remove the cinnamon stick. We will have to wait until the mixture is about to ball and, while stirring, remove it from the fire.
Then, once thickened and aerated, pour it into a mold covered with non-stick paper and leave it in the refrigerator for at least three hours.
When it is demolded once it has set, it is cut into squares.
