These rich mantecadas are made with caramelized fruit in pieces, rum and spices. They are ideal for Christmas times.

Ingredients

24 portions
  • 2 cups caramelized fruit, chopped
  • 2 cups raisin
  • 1/2 cups cranberry
  • 3/4 cups Rum
  • 1 1/2 cups flour
  • 1/2 tablespoons baking soda
  • 1/2 tablespoons salt
  • 1 teaspoon nutmeg powder
  • 1 teaspoon ground ginger
  • 2 sticks unsalted butter
  • 1 cup brown sugar
  • 1/2 cups apricot jam

Preparation

In a deep bowl mix the crystallized fruits, raisins, cranberry and rum. Cover and allow to marinate at least 6 hours.
Butter two buttermilk molds (24 shortbread) and place short pieces of butter.
In a deep bowl, mix flour, baking powder, salt, and spices.
In another deep bowl with an electric mixer beat the butter and brown sugar until you get a spongy mixture. Add the eggs and continue whisking. Add flour mixture and fruits with rum juice and finish whipping.
Pour the dough into the butter rolls and bake in a pre-heated oven at 150 degrees Celsius. Bake for 45-60 minutes or until a stick comes out clean.
While the bread rolls are cooked in a small pot, warm the jam with 1 tablespoon of rum.
Remove the cupcakes from the oven and allow them to cool for 30 minutes. With a brush paint the covers with the apricot jam. Serve the cupcakes

PRESENTATION

Serve the cupcakes as dessert or to accompany a hot drink.

TIPS

These cupcakes can be stored in aluminum foil and last up to 2-3 weeks.
