  • enough Domino® Muscovado Sugar, to spread and sprinkle
  • 1 egg, to varnish
  • 1/4 cups butter, in cubes
  • 6 apples, gala, shelled, and cut into wedges
  • 1/2 teaspoons nutmeg, powder, for apple
  • 1 teaspoon cinnamon, powder, for apple
  • 1/4 cups Domino® Muscovado Sugar
  • 1/4 cups sherry
  • 3 cups mascarpone cheese, cold
  • 1/2 cups whipping cream
  • 1 tablespoon bee honey
  • enough cinnamon powder, to decorate


Preheat the oven to 200 ° C.
On a flat surface, pour a little Domino® Muscovado Sugar, spread the puff pastry with the help of a rolling pin to obtain a wide rectangle approximately half a centimeter thick. On a greased and floured 45 x 32 cm tray, place the puff pastry rectangle, cut the edges to even the sides and make vertical cuts to make smaller rectangles 12 cm wide. Varnish the puff pastry rectangles with egg, cover with Domino® Muscovado Sugar and bake for 25 minutes at 200 ° C, or until the dough is golden brown. Remove from the oven, cool and reserve.
For the apple, in a large frying pan, heat the butter until it melts, add the apple in wedges, the nutmeg, the cinnamon, the Domino® Muscovado Sugar and the sherry; cook over low heat while stirring for 15 minutes. Remove from heat, cool and reserve.
In a blender, mix the cold mascarpone cheese, the whipping cream and the honey; beat for 5 minutes or until everything is creamy. Scoop the mixture onto a duya sleeve.
To assemble the cake, place a sheet of puff pastry on a flat surface, add the mascarpone cheese in the form of drops one glued to another; Add the cold apple and cover with another sheet of puff pastry. Repeat the process and when you place the third puff pastry sheet, just cover it with the mascarpone cheese and decorate with cinnamon powder. Enjoy a 3 layer cake.


Form the cake with puff pastry towers, fill with mascarpone cheese and caramelized apple. Decorate with cinnamon powder.


To make the puff pastry rectangles as even as possible, when baking them, halfway through cooking, place a sheet of waxed paper and a tray on the rectangles. This will prevent them from becoming too inflated due to the weight of the tray and that the surface appears even.
