Preheat the oven to 200 ° C.
On a flat surface, pour a little Domino® Muscovado Sugar, spread the puff pastry with the help of a rolling pin to obtain a wide rectangle approximately half a centimeter thick. For the apple, in a large frying pan, heat the butter until it melts, add the apple in wedges, the nutmeg, the cinnamon, the Domino® Muscovado Sugar and the sherry; cook over low heat while stirring for 15 minutes. Remove from heat, cool and reserve.
In a blender, mix the cold mascarpone cheese, the whipping cream and the honey; beat for 5 minutes or until everything is creamy. Scoop the mixture onto a duya sleeve.
To assemble the cake, place a sheet of puff pastry on a flat surface, add the mascarpone cheese in the form of drops one glued to another; Add the cold apple and cover with another sheet of puff pastry.
