This recipe is a delicious dessert of cheesecakes and pumpkin. Ideal to make in the Halloween season and give a touch of seasonal ingredients to the classic cupcakes.

Ingredients

24 portions
  • 300 grams pumpkin, without skin or nuggets
  • 300 grams wheat flour
  • 200 grams cream cheese, spreading
  • 200 grams sugar
  • 100 grams unsalted butter
  • 4 eggs, big
  • lemon, zest of the skin of a lemon
  • 2 teaspoons yeast, chemistry
  • 24 baking cups

Preparation

Melt the butter and let it temper.
Then peel the pumpkin and remove the seeds.
Weigh it and it will remain only with the 300 grams, if you use more or less the sponge cake can be very humid or too dry and it will not grow properly.
Grate the pumpkin as if it were a carrot.
Add to the grated pumpkin the spreadable cheese and then with a hand blender , make a puree with the pumpkin and cheese.
In a bowl put the four eggs and with the hand blender , beat for 2 minutes at medium speed.
Then add the sugar and beat at medium speed for another two minutes or until a whitish mixture forms.
In a bowl put the sifted flour, the yeast and the lemon zest.
Add over and in this order, melted butter, pumpkin puree with cheese and eggs with sugar.
Beat well with the hand mixer at medium speed until a uniform mixture is formed.
Now put the oven to heat to 190 C up and down.
In a tray for cupcakes or cupcake place the cupcake capsules and distribute about two tablespoons of the mixture we have prepared.
Then put in the oven and leave 50 minutes, until the cakes are golden. Then remove them from the oven and let them cool.
As in the previous step we did not spend all the mixture that we had prepared, we repeat the same step, placing some new muffin capsules, filling them with the mixture that has been left over and baked again.
When all the baked pastries are ready, let them cool.
