Cheesecake with Semi-Bitter Chocolate

Ingredients

8 portions
  • 2 cups chocolate cookie, ground
  • 3 tablespoons sugar
  • 7 tablespoons unsalted butter, melted
  • 3 packages cream cheese, Philadelphia (8 oz)
  • 280 grams bittersweet chocolate, melted
  • 2 tablespoons flour
  • 1 1/4 cups sugar
  • 1 tablespoon vanilla extract
  • 4 eggs, at room temperature

Preparation

In a medium bowl, mix the ground chocolate cookies with 2 tablespoons of sugar and the melted butter. Mix until well stirred.
Put the biscuits on a round, collapsible mold and with your hands push so that they compress the biscuits forming a homogeneous layer.
Preheat the oven to 180 degrees and bake the base of the cake for 9-12 minutes. Then, let cool in a rack.
Lower the oven temperature to 150 degrees.
In an electric mixer , beat the cream cheese, melted chocolate, flour and a pinch of salt at medium speed for 5 minutes. With a spatula, lower what sticks on the sides of the mold.
Make sure that the cream cheese mixture is well-blended, and add 1 1/4 cups of sugar.
Add the vanilla and beat for about 30 seconds. Add the eggs (one at a time) and beat until everything is well incorporated. (Do not over beat once you have added the eggs).
Put the mixture in the mold prepared with the biscuit base and bake until the center is like jello, about 55-60 minutes.
Put on a rack and let it cool completely.
Unmold and transfer to a serving plate.

TIPS

Like all cheesecakes, they get richer if prepared one day in advance.
