These delicious puff pastries are stuffed with a cherries compote with orange liqueur and accompanied by vanilla ice cream.

Ingredients

4 portions
  • 250 grams puff pastry
  • 400 grams pitted cherries, 400 grams
  • 2 tablespoons Cointreau orange liqueur
  • 1 vanilla pods
  • 1 tablespoon Cherry jam
  • 10 eggs, lightly shakes
  • vanilla ice cream, To accompany

Preparation

Preheats the oven to 180 degrees Celsius.
With a rolling pin, open the puff pastry to form a rectangle 1/2 cm wide.
Cut 8 squares in the rectangle.
In a pot mix the cherries with the liquor, cinnamon and jam. Cook until the mixture begins to boil. Remove from heat and remove the vanilla bean.
Fill each square of puff pastry with 2-3 tablespoons of the cherry filling and close to form a triangle. To close the puff pastry, use a little of the beaten egg and press with your fingers.
Place the empanadas in a baking tray previously greased and cover with a little beaten egg to brown them well.
Cook the empanadas for 15 minutes or until the puff pastry is lightly browned. Remove from the oven.

PRESENTATION

Serve accompanied by a scoop of vanilla ice cream.
