  • 250 grams White chocolate, Finely chopped.
  • 250 milliliters milk cream, UHT
  • 10 grains cardamom
  • 1 tablespoon pineapple essence
  • 7 drops yellow food color, lemon
  • 250 chocolates, 56% Bitter cocoa finely chopped


Place the cream in a glass bowl and heat to a boil in the microwave.
Place to infuse the 10 grains of cardamom, the spoonful of pineapple essence, for 7 minutes.
Pass through the colander and reheat for 1 min. in the microwave, then add little by little, gently stirring the white chocolate, apply the drops of edible dye, until a deep lemon yellow tone appears, mix well that no chocolate lumps are left separated from the cream, the ingredients should remain well incorporated, with a pleasant citrus aroma and a bright and velvety tone, the cream should be like a mousse.
Let it rest for 24 hours in the refrigerator in a tightly capped container so that it does not acquire another type of aroma.
For chocolate chocolates bitter. You can temper the chopped chocolate according to the most practical technique for you.
When that chocolate is at the right temperature, pour over the molds, vibrate them against the countertop to remove the air bubbles, and then pour the chocolate content of the mold into the bowl. Remove, unmold by giving them a slight blow against the counter.
